Fresh matoke is the name given to plantains, a type of green banana, in certain areas of eastern African, specifically these are known as fresh Uganda matoke(Green banana). The fruit itself is the same yellowish colour as a banana, the plantain's peel may be green or even black. 

Storage & Use:

Matoke green bananas are used mainly for cooking when they are green and unripe. The most common methods of cooking matoke are boiling, steaming, or roasting. Once they are cooked, the flesh turns yellow and should soften to about the same consistency as potatoes.
